This recipe will help you achieve a golden finish on your steak. You can purchase marrow bones, also known as tubular bones, pre-sliced lengthwise from our shop.
Ingredients

| 4-5 tablespoons | Fresh herbs (e.g. rosemary, thyme, sage, olive herb) |
| 3 tbsp | Grated Parmesan |
| 2 tbsp | Smoked almonds |
| 1 tsp | Andaliman pepper |
| 1 tsp | Chocolate pepper (long pepper) |
| 1 tsp | Pink berries |
| 1 tsp | Salt flakes |
| 1 pinch | Brown sugar |
preparation
- For preparation, you will need a direct heat zone of around 220 degrees Celsius and an indirect heat zone. You can prepare the pesto at the same time as the steak.
- First, scoop the marrow out of the bone with a spoon, place it in a heatproof dish, and put the dish in the preheated grill to melt the marrow. While it's melting, chop the almonds and crush the peppercorns, salt, and sugar in a mortar. Finely chop the herbs. You can choose any herbs you like; you should have about 4-5 tablespoons of finely chopped herbs.
- Now pour the melted marrow through a sieve into another bowl (or directly into the mortar). Sifting is important because there may still be small bone fragments in the marrow. Mix the marrow with the pepper-salt-sugar mixture, the Parmesan cheese, the almonds, and the herbs.
- Now grill the scraped bone over high heat on all sides. Then fill the bone with pesto and grill it indirectly for another 7-10 minutes.
